1. In a non-stick pan, heat the olive oil and add in sweet potatoes.
2. Toss the sweet potatoes and allow to cook for 7 minutes or until the get brown in colour.
3. Add in the onion and Cajun seasoning and cook for 3 minutes.
4. Serve as side dish for breakfast, lunch or dinner.
