Orange Sweet Potatoes
|Sweet potatoes||4 Large, peeled|
|Brown sugar||1⁄4 Cup (4 tbs)|
|Grated orange peel||2 Tablespoon|
|Orange juice||1⁄2 Cup (8 tbs)|
|Freshly ground pepper||To Taste|
|Orange peel||2 Tablespoon, blanched and julienned (For Garnish)|
1 Preheat oven to 375°F.
2 Lightly butter a baking dish.
3 Cut the sweet potatoes in wedges.
4 In a large pot, bring water to a boil.
5 Add in the potatoes, and cook for 15 minutes or until tender.
6 Drain the potatoes well.
7 In the prepared baking dish, place the potatoes.
8 In a pan, put the butter, sugar, orange peel, and orange juice.
9 Cook over low heat until the butter melts.
10 Pour the mixture over the potatoes.
11 Add salt and pepper for seasoning.
12 Bake for about 15 minutes, basting and turning until brown.
13 Serve garnished with orange peel.
