Holiday Sweet Potato Surprise

Ingredients
  Sweet potatoes 6
  Coconut almond frosting 15 Ounce (1 Can)
  Vanilla extract 1 Teaspoon
  Ground cinnamon 1⁄2 Teaspoon
  Miniature marshmallows 20
Directions

GETTING READY
1) Into a pot of boiling water, cook the sweet potatoes till soft
2) Drain them in a colander and allow to cool
3) Using a peeler, peel of the skins and mash
4) Mix in the frosting, vanilla and the cinnamon and mix well
5) Spoon into a greased 12 x 8 x 2 inch baking dish
6) Bake for 18 minutes at 350 F
7) Spread the marshmallow and bake for 5 more minutes

SERVING
8) Serve warm
