|Castor sugar||3 Ounce|
|Lemon||1 , grated rind and juiced|
|Sweet white wine||1⁄4 Pint|
|Double cream||1⁄2 Pint|
1) In a bowl, place together sugar, lemon rind, juice and wine and mix well.
2) In another bowl, beat the cream until it just begins to thicken,
3) While still beating add the wine mixture in gradually.
4) Divide the cream mixture into 4 sorbet or individual glass dishes.
5) Serve chilled as dessert sliced lemon on the edge of the glass if desired.
