Squash Medley

Ingredients
  Butter/Margarine 2 Tablespoon
  Onion 1 Medium, thinly sliced
  Zucchini 1 Large, thinly sliced
  Yellow squash 4 Medium, thinly sliced
  Green pepper 1 Medium, cut into thin strips
  Tomatoes 3 Medium, peeled and quartered
  Salt 1 Teaspoon
  Pepper 1 Dash
  Grated parmesan 1 Cup (16 tbs)
Directions

GETTING READY

1) Preheat the wok or skillet.

MAKING

2) Take a wok or skillet and melt butter in it.
3) Add onion and stir-fry for 2 minutes.
4) Add zucchini, yellow squash and green pepper.
5) Cook for 3 minutes.
6) Add tomatoes, salt and pepper.
7) Sprinkle cheese and toss well.

SERVING

8) Serve as a side dish.
