Sweet Potato Pie
|Soda cracker||1 Cup (16 tbs), crushed|
|Unbaked pie shell||9 Inch|
|Mashed sweet potatoes||2 Cup (32 tbs)|
|Evaporated milk||1 Cup (16 tbs)|
|Brown sugar||2 Tablespoon|
|Hot water||1 Cup (16 tbs)|
|Molasses||1⁄4 Cup (4 tbs)|
Combine potatoes, milk, sugar, water and molasses.
Blend together cracker crumbs, ginger and salt; add to potato mixture.
Stir in raisins.
Pour into unbaked pastry shell.
Bake in a hot oven (450° F) 10 minutes; reduce temperature to 350° F and continue baking 25 minutes or until firm.
Makes one 9-inch pie.
