Roast Goose with Sweet Potato and Apple Dressing
|Young goose||8 Pound, cleaned (Drawn)|
|Chopped onions||1 Cup (16 tbs)|
|Chopped apples||3 Cup (48 tbs)|
|Mashed sweet potatoes||2 Cup (32 tbs)|
|Cider/Orange juice||1⁄2 Cup (8 tbs)|
Rub goose inside and out with salt.
Stuff with a dressing made as follows: Saute onions and apples in butter for 5 min- utes.
Combine with sweet potatoes and seasoning; Stuff into cavity.
Close cavities with skewers; fasten neck skin to back with a skewer.
Prick skin all over.
Place breast down on a rack in a roasting pan.
Roast in a slow oven 325°F. for 2 hours.
Draw off excess fat; baste goose with cider.
Continue to roast for 1 1/2 hours or until tender, basting every 20 minutes.
Transfer to a warm platter; garnish with orange slices and currant jelly.
