Mixed Vegetables A La Grecque

Ingredients
Button Onions- 6
Cauliflower - 4 ounces, broken into 1 inch florets (110gram)
Mushroom - 4 ounces, medium size, halved (110gram)
Dry Kidney Beans - 2 ounce (50 gram), soaked and cooked
Onion - 1 medium, finely chopped
Garlic - 1 clove, crushed
Wine Vinegar - 2 tablespoons
Tomatoes - 1 pound, skinned and quartered or Canned Italian Tomatoes, - 1, 14 ounces
Oregano - 1 teaspoon
Whole Coriander seeds - 1 heaped teaspoon
Whole Peppercorns - 8 black, lightly crushed
Olive Oil - 4 tablespoons
Lemon Juice of 1 lemon
Water - 2 fluid ounces mixed with 1 heaped teaspoon of tomato puree
Spring Onions - 2, finely chopped
Fresh Parsley - 2 tablespoons, finely chopped
Salt to taste
Pepper freshly ground
Directions

MAKING
1) Into a heavy based pan, pour the oil and sauté the onions till soft for 5minutes
2) Tip in the garlic, wine vinegar, tomatoes, oregano, coriander seeds, peppercorns, lemon juice, water, and the tomato puree
3) Bring to a gentle simmer and put in the button onion
4) Cover and let simmer for 20minutes with the lid on
5) Add the cooked beans, cauliflower, mushroom and simmer with lid on for another 20minutes
6) Stir the vegetables around once a while
7) Test the vegetables for doneness
8) Check for seasoning
9) Tip the vegetables onto a shallow dish and leave to cool

SERVING
10) Serve the vegetables sprinkled with some olive oil and chopped parsley
