Sweet Potato Pudding
|Sweet potatoes||1 Pound, peeled, chopped and boiled|
|Skim milk||1⁄3 Cup (5.33 tbs)|
|Vanilla extract||1 Teaspoon|
|Cinnamon powder||1 Teaspoon|
|Unsweetened pineapple juice||6 Tablespoon|
|Flaked unsweetened coconut||3 Tablespoon, finely powdered|
1. In an electric mixer, combine all the ingredients apart from pineapple juice and coconut. Puree till smooth.
2. Pour into individual dessert glasses and top with equal quantities pineapple juice and coconut.
3. Serve immediately or chilled, as desired.
