Sweet Potato Pudding

Ingredients
  Sweet potatoes 1 Pound, peeled, chopped and boiled
  Skim milk 1⁄3 Cup (5.33 tbs)
  Honey 3 Tablespoon
  Vanilla extract 1 Teaspoon
  Cinnamon powder 1 Teaspoon
  Unsweetened pineapple juice 6 Tablespoon
  Flaked unsweetened coconut 3 Tablespoon, finely powdered
Directions

MAKING
1. In an electric mixer, combine all the ingredients apart from pineapple juice and coconut. Puree till smooth.
2. Pour into individual dessert glasses and top with equal quantities pineapple juice and coconut.

SERVING
3. Serve immediately or chilled, as desired.
