Honey Glazed Sweet Potato & Carrot Tzimmes

Tzimmes is traditionally a part of the Rosh Hashanah meal. It is a tradition to eat sweet and honey-flavored dishes during this occasion. Carrots sliced in rounds, looks like gold coins, and symbolizes the hope of prosperity in the year to come.
Ingredients
  Carrots 1 Pound, peeled and cut in 1 inch cubes
  Sweet potatoes 6 Medium, peeled and cut into 1/2 slices
  Pitted prunes 1⁄2 Cup (8 tbs) (optional)
  Orange juice 1 Cup (16 tbs)
  Honey/Brown sugar 1⁄2 Cup (8 tbs)
  Salt 1⁄2 Teaspoon
  Cinnamon 1⁄4 Teaspoon
  Margarine 2 Tablespoon
  Canned pineapple chunks 20 Ounce, drained (1 can)
  Canned mandarin oranges 11 Ounce, drained (1 can)
Directions

GETTING READY
1) Preheat the oven to 350°F.
2) In a saucepan, cook the carrots and potatoes in boiling salted water.
3) Put the lid on and cook until the vegetables are tender.
4) Pour off the water.

MAKING
5) In a casserole, place the carrots, potatoes and prunes.
6) Stir the carrot mixture lightly.
7) In a bowl, mix together, orange juice, honey, salt and cinnamon.
8) Spoon the honey mixture evenly over the carrot mixture.
9) Mark the vegetable mixture with margarine.

FINALIZING
10) Put the lid on and bake 30 minutes.
11) Remove the lid, mix gently and add pineapple and mandarin oranges.
12) Bake for 10 minutes more.

SERVING
13) Serve hot drizzled with little honey and garnish with mint sprig,if desired.

Story
I love the combination of honey and carrots. So when I came across this recipe, I just thought of giving a try. It turned out amazing, cinnamon gives little spark to the dish.
