Mixed Veggies in Caramelized Onion
|Extra virgin olive oil||1⁄4 Cup (4 tbs)|
|Onion||1 , peeled and sliced to half moons|
|Bell peppers||2 , diced fairly large (Any Color)|
|Baby carrots||1 Large, sliced|
|Zucchini||3 Small, sliced|
|Fresh oregano/1 teaspoon dry oregano||2 Tablespoon|
|Juice of lemon||1|
|Zest of lemon||1|
|Olives||1⁄4 Cup (4 tbs)|
|Mint leaves||2 Tablespoon|
Preheat nonstick skillet to medium high heat.
Add olive oil and onion. Caramelize until it starts to get color on one side, it will take 4-6 minutes.
Add the rest of vegetables, oregano, lemon zest and continue to caramelize mixing occasionally for 8-10 minutes, or until they start to caramelize.
When you see first caramelization signs add 2 tablespoons of water and let the vegetables soften a bit. If they not soft enough add a little more water.
Now add olives, lemon juice, salt and pepper and continue to cook for another minute.
Transfer to a platter and add mint leaves on top.
Serve warm or cold.
