Mixed Vegetable Relish

Ingredients
  Cauliflower head 1⁄2 Small, cut in flowerets and sliced
  Carrots strip 2 , pared
  Celery stalks 2 , cut into 1 inch pieces making 1 cup
  Green pepper 2 , cut in 2-inch strips
  Canned pimientos 4 Ounce, drained, cut in strips (1 Jar)
  Canned pitted green olives 3 Ounce, drained (1 Jar)
  Wine vinegar 3⁄4 Cup (12 tbs)
  Olive oil/Salad oil 1⁄2 Cup (8 tbs)
  Sugar 2 Tablespoon
  Salt 1 Teaspoon
  Dried oregano leaves 1⁄2 Teaspoon
  Pepper 1⁄4 Teaspoon
  Water 1⁄4 Cup (4 tbs)
Directions

MAKING
1) In a large skillet add all ingredients. Mix together.
2) Bring to boil stirring occasionally.
3) Decrease heat and simmer, covered for 5 minutes.
4) Refrigerate for at least 24 hours.

SERVING
Drain well before serving the relish.
