Candied Sweet Potatoes
|Sweet potatoes||2 Pound|
|Packed brown sugar||1⁄2 Cup (8 tbs)|
|Orange juice||1 Cup (16 tbs)|
|Orange peel||1 Tablespoon|
|Pumpkin pie spice||1 Teaspoon|
|Sherry||1⁄3 Cup (5.33 tbs)|
1 In a pan, boil potatoes in salted water for 30 minutes or until almost tender.
2 Drain well; peel and cut into serving-size pieces. (Or dry-packed canned sweet potatoes may be used if preferred.)
3 In a shallow 1 1/2 -quart baking dish, place the potatoes.
4 Mix the remaining ingredients and bring to a boil, stirring; boil for 3 minutes.
5 Pour the mixture over potatoes.
6 Bake in 350°Fahrenheit oven for 1 hour, basting regularly to glaze.
7 Serve as desired.
