Sweet Potato Pudding
|Butter/Margarine||1⁄4 Cup (4 tbs)|
|Sugar||3⁄4 Cup (12 tbs)|
|Pumpkin pie spice||1⁄2 Teaspoon|
|Milk||1 1⁄2 Cup (24 tbs) (Use Part Cream For Richer Flavor)|
|Raw sweet potatoes||2 1⁄2 Cup (40 tbs), grated|
1 In a bowl, cream butter and sugar.
2 Stir in eggs, pumpkin pie spice, salt and milk.
3 Gradually fold in grated sweet potatoes.
4 Into a buttered, shallow 2-quart baking dish, pour the mixture and bake in 400°Fahrenheit oven for 1 hour.
5 Great with pork roast, baked ham or chicken.
