Mashed Roasted Sweet Potatoes with Parmesan
|Sweet potatoes||5 Medium|
|Olive oil||2 Tablespoon|
|Parmesan cheese||1⁄4 Cup (4 tbs), grated|
1. Wrap the sweet potatoes individually in foil. Bake them inside the preheated oven at 400F for about an hour.
2. After 1 hour bring out the potatoes and unwrap them to cool down. Pull the skin out of the sweet potatoes and place them into a large bowl. Pour the olive oil and sprinkle the grated cheese, sea salt and pepper. With a potato masher, mash the sweet potatoes to smooth, while they are still hot.
3. Serve it with shredded parmesan cheese.
