Holiday Sweet Potato Nests

Ingredients
  Sweet potatoes/Yams 3 Cup (48 tbs), cooked
  Margarine 3 Tablespoon
  Egg 1 , beaten
  Salt 1⁄2 Teaspoon
  Pineapple slices 6
  Brown sugar 1⁄4 Cup (4 tbs)
  Dry mustard 1 Teaspoon
  Orange peel 1⁄2 Teaspoon, grated
  Cinnamon 1⁄2 Teaspoon
  Cloves 1⁄8 Teaspoon
  Tarragon vinegar 2 Teaspoon
  Sweetened rhubarb sauce 1⁄2 Cup (8 tbs), drained
  Raisins 1⁄3 Cup (5.33 tbs)
  Pecan halves/Walnut halves 6
Directions

Mash the heated potatoes with sugar and margarine; let cool.
Blend in egg and salt; divide into 6 parts.
Put pineapple slices on a greased cookie sheet; mound some mixture on each slice, and form a nest in each center.
Simmer the remaining ingredients together for a few minutes except for nuts.
Fill nests with mixture.
Top each with 1/2 a nut.
Bake at 350° for 10 minutes.
