Creamy Vegetable Medley

Ingredients
  Frozen broccoli carrot cauliflower blend 16 Ounce (1 package)
  Condensed cream of mushroom soup 10 3⁄4 Ounce, undiluted (1 Can)
  Shredded swiss cheese 4 Ounce, divided (1 Cup)
  Sour cream 1⁄3 Cup (5.33 tbs)
  Diced pimientos 2 Ounce, drained (1 Jar)
  Canned french fried onions 2 3⁄4 Ounce, divided (1 Can)
  Salt 1⁄4 Teaspoon
  Pepper 1⁄4 Teaspoon
Directions

In a bowl, combine the vegetables, soup, 1/2 cup cheese, sour cream, pimientos, salt, pepper and half of the onions.
Pour into a greased 1-1/2-qt baking dish.
Cover and bake at 350° for 30-40 minutes or until the edges are browned.
Uncover; sprinkle with the remaining cheese and onions.
Bake 5 minutes longer or until the cheese is melted.
