Peacny Sweet Potato Bake
|Packed brown sugar||1⁄2 Cup (8 tbs)|
|All purpose flour||3 Tablespoon|
|Ground nutmeg||1⁄2 Teaspoon|
|Cold butter/Margarine||2 Tablespoon|
|Chopped pecans||1⁄2 Cup (8 tbs)|
|Canned sweet potatoes||68 Ounce, drained, cut up (4 Cans, 17 Ounces Each)|
|Canned sliced peaches||32 Ounce, drained (2 Cans, 16 Ounces Each)|
|Miniature marshmallows||1 1⁄2 Cup (24 tbs)|
In a bowl, combine brown sugar, flour and nutmeg; cut in butter until the mixture resembles coarse crumbs.
Stir in pecans.
Place sweet potatoes and peaches in a shallow 2-qt broiler-proof baking dish.
Sprinkle with pecan mixture.
Bake, uncovered, at 350° for 35 minutes.
Sprinkle with marshmallows.
Broil 4-6 in from the heat until marshmallows are golden brown.
