Emma's Candied Sweet Potatoes
|Sweet potatoes||6 Medium|
|Unsalted butter||1⁄2 Cup (8 tbs) (Reserve 1/4 Cup For Greasing The Pan)|
|Orange juice||1⁄2 Cup (8 tbs)|
|Brown sugar||1⁄2 Cup (8 tbs)|
Place the sweet potatoes (with skins on) in a large pot over high heat with water to cover, bring to a boil, lower the heat and simmer until just tender when pierced with a fork.
Drain the potatoes and remove their skins when cool enough to handle.
While the sweet potatoes are boiling, preheat the oven to 400°F.
Lightly butter a 9 x 13-inch baking dish.
Slice the potatoes into 1-inch rounds and place in layers in the baking dish.
Combine the butter, orange juice, brown sugar, and salt in a small saucepan over medium heat.
Cook, stirring occasionally, for 5 minutes, or until the butter is melted and the sugar dissolved.
Pour over the potatoes, stir to evenly coat, and bake for 10 to 15 minutes, or until the juice mixture is bubbling.
