|Red radishes||8 Small|
|Rice vinegar||2 Tablespoon|
|Sugar||1 1⁄2 Tablespoon|
1. Trim radishes. Make a slight cut in surface of radish to form "petal." Cut away center portion of petal to expose white flesh. Continue around radish in layers to the top. Soak in water to allow petals to separate and to remove some of the sharp flavor (10-20 minutes).
2. Sprinkle radishes lightly with salt and set aside until radishes soften slightly (about 10 minutes). Rinse in cold water. Soak in rice vinegar and sugar (sweet vinegar) for 30 minutes or until ready to use, whichever is longer.
