Battered Leeks

Ingredients
  Diced leeks 4 Cup (64 tbs), divided
  Eggs 4
  Nonfat dry milk powder 2⁄3 Cup (10.67 tbs), divided
  Salt 1⁄2 Teaspoon, divided
  Cherry tomatoes 4
  Italian parsley 1 Tablespoon (for garnish)
Directions

GETTING READY
1. Spray a 10" nonstick skillet with cooking spray

MAKING
2. Set the skillet over medium flame, add two cups of leeks, cover and cook until soft,stiring once in a while
3. In a small bowl, Beat together the eggs, a third cup of milk powder, quarter teaspoon salt and a dash of pepper
4. Pour this mixture into the skillet, making sure the egg mixture coats the leeks thoroughly
5. Cook till the bottom is golden, for a couple of minutes and carefully turn it over, using a pancake turner
6. Cook towards the other side for another minute until just set, add to a warm platter and repeat the process again

SERVING
7. Garnish with tomatoes and parsley and serve
