Millet, Fruit And Vegetable Salad

Ingredients
  Corn 1⁄2 Cup (8 tbs)
  Cooked millet 1 Cup (16 tbs)
  Chopped sweet red pepper 1⁄2 Cup (8 tbs)
  Banana 1 , cubed
  Lemon juice 2 Teaspoon
  Chopped walnuts 2 Tablespoon
  Sunflower seeds 2 Tablespoon, toasted
  Lemon vinaigrette To Taste (Dressing)
  Spinach leaves 1⁄4 Cup (4 tbs) (To Garnish)
Directions

MAKING
1. In a pan, simmer the corn in water and cook till tender; drain and combine with millet and pepper
2. Toss the banana in lemon juice and mix into the corn mixture along with nuts and sunflower seeds and toss them all with dressing

SERVING
3. Arrange on a platter on a bed of spinach leaves and serve
