Grilled Marinated Vegetables

Ingredients
  Balsamic vinegar 1⁄4 Cup (4 tbs)
  Garlic 2 Clove (10 gm)
  Fresh thyme 2 Tablespoon
  Fresh basil 1⁄2 Cup (8 tbs), snipped
  Extra virgin olive oil 1⁄4 Cup (4 tbs)
  Pepper To Taste
  Eggplants 3 , sliced vertically into 1/3 inch pieces
  Leeks 4 , trimmed, washed and halved lengthwise
  Zucchini 2 , sliced vertically into 1/3 inch pieces
  Red bell peppers 3 , cored, seeded and cut into 2 inch pieces
Directions

MAKING
1. In a large nonmetallic bowl, combine garlic, olive oil, vinegar, thyme and pepper and whisk them well to blend
2. Rinse eggplants, pat dry and combine with leeks, zucchinis and red bell peppers in a large shallow nonmetallic dish
3. Pour the marinade over the vegetables, tightly cover the dish and refrigerate for an hour
4. Heat the broiler, drain the marinade from vegetables adn place them on the prepared broiler, cooking till they are tender; turn them often to cook evenly

SERVING
5. Serve as appropriate
