Garlic Stuffed Red Potatoes
|Red potatoes||4 Medium|
|Garlic||5 Clove (25 gm), thinly sliced|
|Parsley||2 Tablespoon, finley minced|
|Nonfat cooking spray||1|
1 Throughly clean the potatoes and peel.
2 Cut each into 1/4th inch thick slices.
3 Lightly coat the grill with the cooking spray and preheat for 5 minutes.
4 Create a pocket in each potato slice, using the tip of a sharp knife.
5 Insert 1 slice of garlic into each pocket.
6 Place the slices in the grill and sprinkle some oregano, parsley, salt and pepper on top.
7 Grill for 7-9 minutes or until tender.
8 Serve immediately.
