Sweet Potato Bisque
|Sweet potatoes||3 Medium|
|Cream cheese||60 Milliliter (1/4 Cup)|
|Chicken stock||375 Milliliter (Homemade, 1 1/2 Cups)|
1. Wash the sweet potatoes but do not peeled; cut into cubes.
2. In a pot of boiling water, add sweet potato cubes; cover and boil until tender.
3. Drain and mash the potatoes.
4. In a mixing bowl, combine mash potato with Yogurt Cream Cheese and stock or process in a blender on medium speed until smooth.
5. Serve warm.
