Vegetable Melange

Ingredients
  Spaghetti squash 1 Cup (16 tbs), thawed
  Broccoli florets 1⁄2 Cup (8 tbs), blanched
  Cauliflower florets 1 Cup (16 tbs), blanched
  Carrot 1⁄2 Cup (8 tbs), sliced
  Carrot 1⁄2 Cup (8 tbs), sliced, blanched
  Zucchini 1⁄4 Cup (4 tbs), sliced
  Yellow squash 1⁄3 Cup (5.33 tbs), sliced
  Green onion 1 Tablespoon
  Scallions 1 Tablespoon (Green Onion)
  Margarine 2 Teaspoon, reduced
  Reduced calorie margarine 2 Teaspoon
  Lemon juice 2 Teaspoon
  Pepper 1 Dash
  Lemon peel 1 Teaspoon, grated
Directions

MAKING
1.Take a 4 quart microwavable casserole and add in all the ingredients except the lemon peel.
2. Microwave covered at 50% medium for 5 minutes. Stir every 2 minutes.
3. Now, add in the lemon peel and stir.

SERVING
4.Let stand for a minute after microwaving prior to serving or let salad cool to room temperature prior to serving.
