While preparing baked potatoes, steamed broccoli and bacon, begin cheese sauce.
Cheese sauce ingredients:
2 TBS Butter
2 TBS flour
1 C shredded Parrano Cheese
¾ C milk
1/8 tsp freshly grated nutmeg
Cheese sauce instructions:
Melt butter in a heavy bottom sauce pan on medium low.
Add flour and whisk until smooth, cook one minute, but do not brown.
Add milk slowly while bringing to temperature.
Add cheese and spices and let bubble until thickened.
Top warm baked potato with cheese sauce, broccoli, bacon and chives and serve
