|Sweet potato||1 Pound, coarsely grated (450 Gram)|
|Water||3 Tablespoon (45 Milliliter)|
|Butter||45 Milliliter (3 Level Tablespoon)|
|Chopped fresh mint||2 Teaspoon (Leveled)|
|Soft dark brown sugar||1 Teaspoon (Leveled)|
1. Put the grated sweet potato and water into a large, heatproof bowl, cover with cling film and microwave on HIGH for 5 minutes.
2. Drain the potato and stir in the butter and chopped mint.
