Minted Sweet Potato Shreds

Ingredients
  Sweet potato 1 Pound, coarsely grated (450 Gram)
  Water 3 Tablespoon (45 Milliliter)
  Butter 45 Milliliter (3 Level Tablespoon)
  Chopped fresh mint 2 Teaspoon (Leveled)
  Soft dark brown sugar 1 Teaspoon (Leveled)
Directions

1. Put the grated sweet potato and water into a large, heatproof bowl, cover with cling film and microwave on HIGH for 5 minutes.
2. Drain the potato and stir in the butter and chopped mint.
