Brandy Snaps Filled with Syllabub

Ingredients
  Double cream 3 Fluid Ounce (85 Milliliter)
  Caster sugar 2 Teaspoon
  Grated lemon rind 1 Teaspoon
  Lemon juice 1 Teaspoon
  Grated orange rind 1 Teaspoon
  Orange juice 2 Teaspoon
  Brandy snaps 3 Small
Directions

MAKING
1) Stiffly whisk the cream, add the sugar, lemon rind and juice, and orange rind and juice; whisk further until thick and creamy.

SERVING
2) Pour 1/3 of the syllabub in each brandy snap and serve immediately.
