1. In a large bowl mix the clean kale along with salt and lemon juice, massage the kale with your hands until all the kale is squashed and reduced.
2. Once done wash it under cold running water to drain out the excess salt.
3. Add the olive oil and lemon juice and mix, store in a clean glass jar.
