Vegetable Medley

Ingredients
  Onion 1 Large, sliced
  Garlic 1 Clove (5 gm), minced
  Minced parsley 1⁄4 Cup (4 tbs)
  Salt 2 Teaspoon
  Pepper 1⁄2 Teaspoon
  Ground thyme 1⁄2 Teaspoon
  Dried basil/1 tablespoon fresh basil leaves, if available 1⁄2 Teaspoon
  Cooking oil 2 Tablespoon
  Green beans 1 Pound, cut
  Tomatoes 3 Large, quartered
  Diced summer squash 2 Cup (32 tbs), sliced 1 inch thick
Directions

1. Cook onion, garlic, parsley, and seasonings in oil in a large skillet for 3 minutes.
2. Add beans with 1/2 cup water and simmer, covered, for 10 minutes.
3. Add remaining vegetables, cover and cook until tender but crisp. Don't overcook.
