|Potatoes||2 Large, boiled and cooled|
|Fried bacon pieces||2 , crushed (Crisp)|
|Sour cream||2 Tablespoon|
|Shredded cheddar cheese||1⁄2 Cup (8 tbs)|
After the potatoes have been boiled and cooled, take a sharp knife and cut a circle in the potato.
Then take a spoon and hollow the potato out leaving very little of the meat or potato around the sides of the skin.
Place in hot oil and deep-fry until golden brown and slightly crispy.
While still very hot, add half of the sour cream and 1 piece of bacon (crushed).
Then sprinkle half of the Cheddar cheese and half of the chives over the top.
