BRINJAL SALAD ( Salata betenjan )
|Brinjals||3 Large, roasted|
|Onion||1 Medium, minced|
|Garlic||2 Clove (10 gm), minced|
|Lemon juice||2 Tablespoon|
Take 2 or 3 large brinjals, roast well in jackets and allow to cool.
Cut in half and scoop vegetable into a dish.
Mash the brinjal, adding one medium minced onion, two cloves of minced garlic, two tablespoons lemon juice.
Season with salt and pepper and mix well.
