SWEET POTATOES WITH FRIED TOMATOES
|Sweet potatoes||1 Pound|
|Tomatoes||2 , cut in slices|
|Potatoes||1 , sliced into rounds|
|Parsley sprigs||3 (For Garnish)|
Steam potatoes in large pan with little water, cover with tightly fitting lid.
Peel and lay in dish with melted butter.
Cut tomatoes in thick slices and fry gently until just soft, and place round potatoes, as border with sprigs of parsley to garnish.
