Sweet Potato Tart
|Orange marmalade||1 1⁄2 Tablespoon|
|Unbaked pie shell||1|
|Margarine||1⁄2 Cup (8 tbs), softened|
|Sugar||1⁄2 Cup (8 tbs)|
|Flour||1 1⁄2 Tablespoon|
|Mashed cooked sweet potatoes||1 Cup (16 tbs)|
|Ground nutmeg||1⁄2 Teaspoon|
Preheat oven to 325 degrees.
Brush marmalade over bottom of pie shell.
Cream margarine and sugar in mixer bowl until light and fluffy.
Add flour; mix well.
Add sweet potatoes, egg yolks and nutmeg; mix well.
Beat egg whites in mixer bowl until stiff peaks form.
Fold into sweet potato filling.
Spoon into prepared pie shell.
Bake for 30 to 35 minutes or until set.
