Fried Potato Cakes
|Whole wheat flour||1⁄4 Cup (4 tbs)|
|Egg||1 , beaten|
|Cooking oil||2 Teaspoon|
|Potatoes||2 Cup (32 tbs), shredded|
|Onion||3 Tablespoon, finley chopped|
|Sunflower seed||3 Tablespoon, shelled|
|Dry breadcrumbs||2 Tablespoon|
|Whole wheat flour||1 Tablespoon|
|Milk||1⁄2 Cup (8 tbs)|
|Shredded cheddar cheese||1⁄2 Cup (8 tbs)|
In a bowl combine flour and 1/8 teaspoon salt.
Combine egg and oil; stir into flour mixture just till moistened.
Stir in potatoes, onion, the 3 tablespoons sunflower seed, and bread crumbs.
Shape into 4 patties about 1/2 inch thick.
Cook patties in 1 tablespoon of the butter over medium heat about 3 minutes on each side or till golden brown.
Remove from skillet.
For sauce, melt the remaining 1 tablespoon butter in a saucepan.
Stir in the 1 tablespoon flour and 1/8 teaspoon salt.
Add milk all at once.
Cook and stir till thickened and bubbly.
Cook and stir 1 to 2 minutes more.
Add cheese, stirring till melted.
Top each patty with some of the sauce.
