Fried Potato Cakes

Ingredients
  Whole wheat flour 1⁄4 Cup (4 tbs)
  Egg 1 , beaten
  Cooking oil 2 Teaspoon
  Potatoes 2 Cup (32 tbs), shredded
  Onion 3 Tablespoon, finley chopped
  Sunflower seed 3 Tablespoon, shelled
  Dry breadcrumbs 2 Tablespoon
  Butter/Margarine 3 Tablespoon
  Whole wheat flour 1 Tablespoon
  Milk 1⁄2 Cup (8 tbs)
  Shredded cheddar cheese 1⁄2 Cup (8 tbs)
Directions

In a bowl combine flour and 1/8 teaspoon salt.
Combine egg and oil; stir into flour mixture just till moistened.
Stir in potatoes, onion, the 3 tablespoons sunflower seed, and bread crumbs.
Shape into 4 patties about 1/2 inch thick.
Cook patties in 1 tablespoon of the butter over medium heat about 3 minutes on each side or till golden brown.
Remove from skillet.
Keep warm.
For sauce, melt the remaining 1 tablespoon butter in a saucepan.
Stir in the 1 tablespoon flour and 1/8 teaspoon salt.
Add milk all at once.
Cook and stir till thickened and bubbly.
Cook and stir 1 to 2 minutes more.
Add cheese, stirring till melted.
Top each patty with some of the sauce.
