Sweet Potato Bread
|Sweet potatoes||2 Large|
|Cornmeal||1 Cup (16 tbs)|
|Flour||1 Cup (16 tbs)|
|Baking powder||1 Teaspoon|
|Salt||1 1⁄2 Teaspoon|
|Melted butter||2 Tablespoon|
|Warm milk||1 1⁄4 Cup (20 tbs)|
|Eggs||2 , lightly beaten|
Parboil sweet potatoes in saucepan for 50 minutes or until tender-crisp.
Peel sweet potatoes; cut into 1/4-inch cubes.
Preheat oven to 400 degrees.
Sift cornmeal, flour, baking powder and salt into bowl; mix well.
Stir in mixture of honey, melted butter, milk and eggs.
Fold in sweet potatoes.
Pour batter into greased 8 x 8-inch baking dish.
Bake for 1 hour.
Cut into squares; drizzle with melted butter.
