Sweet Potato Bake

Ingredients
  Sweet potatoes 6 Medium
  Egg 1
  Milk 3⁄4 Cup (12 tbs)
  Brown sugar 2 Tablespoon
  Butter/Margarine 2 Tablespoon
  Orange peel 2 , cut with vegetable peeler (1 Inch Strips)
  Orange juice 2 Tablespoon
  Salt 3⁄4 Teaspoon
  Ground cinnamon 1⁄4 Teaspoon
Directions

In covered pan cook whole sweet potatoes in enough boiling salted waterto cover for 30 to 40 minutes or till tender; drain, peel, and quarter.
Place steel blade in work bowl.
Add half the potatoes and all of the remaining ingredients; process till smooth.
Add remaining potatoes; process till smooth.
Turn into greased 1-quart baking dish.
Bake, covered, in 350° oven for 35 to 40 minutes or till heated through.
