Sweet Frankfurter Relish

Ingredients
  Carrots 2 Medium
  Tomatoes 2 Medium, peeled and quartered
  Cucumber 1 Medium, seeded and quartered
  Onion 1 Medium, quartered
  Sugar 2 Cup (32 tbs)
  Vinegar 2 Cup (32 tbs)
  Salt 1⁄2 Teaspoon
  Cayenne 1⁄8 Teaspoon
  Mixed pickling spices 1 Tablespoon
Directions

Put carrots, tomatoes, cucumber, and onion through coarse blade of food grinder.
Drain excess liquid.
In large saucepan mix vegetables, sugar, vinegar, salt, and cayenne.
Tie pickling spices in cheesecloth bag; add to saucepan.
Bring to boiling.
Cook over medium-high heat 45 to 50 minutes, stirring occasionally.
Remove spice bag.
Pour into hot, clean half-pint jars; leave 1/2-inch headspace.
Adjust lids.
Process in boiling water bath 5 minutes.
(Start timing when water returns to boil.)
