Fried Zucchini Cakes

Ingredients
  Zucchini 1 1⁄2 Pound
  Parsley 3 Tablespoon
  Crushed butter crackers 1 Cup (16 tbs)
  Shredded sharp cheddar cheese 3 Tablespoon
  Eggs 2 , beaten
  Onion 1 Medium, grated
  Flour 1⁄2 Cup (8 tbs)
  Olive oil/Vegetable oil/mixture of oil and butter 2 Tablespoon (For Frying)
  Salt To Taste
  Pepper To Taste
Directions

Scrape zucchini to remove skin.
Grate coarsely into colander; sprinkle with salt.
Let stand for 30 minutes.
Press to remove excess moisture.
Combine zucchini with parsley, cracker crumbs, cheese, eggs, onion, salt and pepper in bowl; mix well.
Shape by tablespoonfuls into balls.
Coat with flour; press into flat cakes.
Fry in oil in skillet over low to medium heat until golden brown.
