Fried Zucchini Cakes
|Zucchini||1 1⁄2 Pound|
|Crushed butter crackers||1 Cup (16 tbs)|
|Shredded sharp cheddar cheese||3 Tablespoon|
|Eggs||2 , beaten|
|Onion||1 Medium, grated|
|Flour||1⁄2 Cup (8 tbs)|
|Olive oil/Vegetable oil/mixture of oil and butter||2 Tablespoon (For Frying)|
Scrape zucchini to remove skin.
Grate coarsely into colander; sprinkle with salt.
Let stand for 30 minutes.
Press to remove excess moisture.
Combine zucchini with parsley, cracker crumbs, cheese, eggs, onion, salt and pepper in bowl; mix well.
Shape by tablespoonfuls into balls.
Coat with flour; press into flat cakes.
Fry in oil in skillet over low to medium heat until golden brown.
