|Leeks||8 , washed and cut into short lengths|
|Green pepper||1 , cored, seeded and thinly sliced|
|Tomatoes||1 Pound, peeled, quartered (450 Gram)|
|Black olives||12 Large, halved, pitted|
|Lemon||1 , juiced|
Heat the oil in a large frying pan.
Add the leeks and stir well.
Cover the pan, reduce the heat to low and cook gently for 10 minutes, stirring occasionally.
Add the pepper, tomatoes, olives, lemon rind and juice, salt and pepper.
Cover the pan and cook for 15 minutes.
Remove the lemon peel and serve.
