Curried Chicken Drumsticks
|All purpose flour||1 Tablespoon|
|Onions||2 , sliced|
|Dry white wine||5 Tablespoon|
|Curry powder||2 Tablespoon|
|Black pepper||1 Teaspoon|
|Mango chutney||2 Tablespoon|
|Chopped parsley||3 Tablespoon|
|Milk||1⁄2 Cup (8 tbs)|
Toss the chicken drumsticks in the flour.
Heat the oil in a pan and fry the onions until softened.
Add the wine and cook for 3 minutes.
Remove from the heat and add the curry powder, pepper, chutney and parsley.
Spread over the chicken drumsticks and leave to marinate for 30 minutes.
Remove the chicken from the marinade, pat dry and broil, turning, for 15-20 minutes.
Meanwhile, put the marinade in the blender with the milk and blend.
Serve the chicken hot or cold with the marinade as a dip.
Garnish with parsley and tomato wedges.
