Fried potato is always sinful! Loaded with taste, these Boxty Potato Cakes are a plateful of temptation! Flavored with herbs, this recipe is simple and delicious. The grilled tomatoes go as the perfect accompaniment with this.
Ingredients
  Potato 1⁄2 Pound
  Salt 1 Teaspoon (Leveled)
  Plain flour 2 Ounce
  Milk 4 Tablespoon
  Butter/Oil 2 Ounce
  Tomatoes 2
  Herbs To Taste
Directions

MAKING
1) Wash, peel, and coarsely grate the potato.
2) Drain excess liquid.
3) In a bowl, add the potato, salt, flour, and enough milk to make a rather stiff batter.
4) Beat the mix for a few minutes.
5) Keep aside for some time.
6) In a frying pan, heat butter or oil.
7) Drop in large tablespoonfuls of the mixture and fry for 10 minutes, turning once while cooking.

SERVING
8) Serve hot with freshly grilled or fried tomato halves.
