Boxty Potato Cakes
|Salt||1 Teaspoon (Leveled)|
|Plain flour||2 Ounce|
1) Wash, peel, and coarsely grate the potato.
2) Drain excess liquid.
3) In a bowl, add the potato, salt, flour, and enough milk to make a rather stiff batter.
4) Beat the mix for a few minutes.
5) Keep aside for some time.
6) In a frying pan, heat butter or oil.
7) Drop in large tablespoonfuls of the mixture and fry for 10 minutes, turning once while cooking.
8) Serve hot with freshly grilled or fried tomato halves.
