BRINJAL CASSEROLE

Ingredients
  Diced brinjal 2 Cup (32 tbs)
  Cooked tomato 1 1⁄2 Cup (24 tbs)
  Corn 1 1⁄2 Cup (24 tbs) (Cooked Or Canned)
  Grated cheese 1⁄4 Cup (4 tbs)
  Salt To Taste
  Pepper To Taste
  Soft bread crumbs 1 Cup (16 tbs)
Directions

Simmer the brinjal in little water then drain.
Combine the brinjal, corn, tomato and seasoning and place mixture in greased casserole dish.
Top with mixed cheese and crumbs and dot with butter.
Bake in moderate oven for 25 minutes.
