|Sliced mushrooms||1 Cup (16 tbs)|
|Onion||1⁄2 Cup (8 tbs), chopped|
|Soft whole wheat breadcrumbs||1 Cup (16 tbs)|
|Chilli sauce||1⁄4 Cup (4 tbs)|
|Horse radish||2 Tablespoon|
|Chopped cucumber||1 Cup (16 tbs)|
|Buttered bread crumbs||1⁄2 Cup (8 tbs)|
Wash and boil brinjal for 10 minutes.
Cut in half lengthwise and scoop out pulp and sprinkle with salt and pepper.
Heat oil and cook mushrooms and finely chopped onion gently for 7 mins.
Add soft breadcrumbs chopped cucumber, horseradish, chilli sauce and chopped brinjal pulp.
Cook further 3 minutes, then remove-from heat and fill brinjal shell with the mixture.
Place in buttered oven dish, sprinkle with buttered crumbs, add a little water just to cover the bottom of the dish and bake at 350 degrees F.
