Sweet Potato Puff

Ingredients
  Butter/Margarine 1⁄4 Cup (4 tbs), melted
  Mashed cooked sweet potato 4 Cup (64 tbs)
  Salt 1⁄2 Teaspoon
  White pepper 1⁄8 Teaspoon
  Sugar 1 1⁄2 Tablespoon
  Eggs 2 , separated
  Ground cinnamon To Taste
Directions

Combine all ingredients except last 2.
Beat egg whites until stiff.
Then beat egg yolks until thick.
Fold yolks into potato mixture; then fold in whites.
Put in greased shallow casserole.
Sprinkle with cinnamon.
Bake, uncovered, in preheated moderate oven (375°F.) for about 30 minutes.
Makes 6 servings.
