Rice, Pulse And Vegetables Khichdi

Ingredients
  Rice 1 Cup (16 tbs)
  Split moong dal 1⁄2 Cup (8 tbs) (Split green gram skinless /dhuli moong dal)
  Carrot 1 Small, grated
  Spinach 1⁄2 Cup (8 tbs), chopped
  Turmeric powder 1⁄4 Teaspoon
  Ghee/Oil 1 Teaspoon
  Salt To Taste
Directions

Combine rice and moong dal. Clean, wash and soak in three cups of water for eight to ten minutes. Drain water and keep aside.In a pressure cooker combine the washed rice and dal, grated carrot, chopped spinach, turmeric powder and salt along with three cups of water and pressure cook till done. Transfer the khichri in a bowl, add ghee and mix well to make the khichri soft and mushy. Serve at room temperature.
