Parsnip And Pear Puree
|Canola oil||1 Tablespoon|
|Onion||1 Medium, chopped|
|Parsnips||1 Pound, peeled and sliced|
|Pears||2 Medium, peeled, cored, and chopped|
|Vegetable broth||1⁄2 Cup (8 tbs)|
|Finely chopped fresh ginger||1 Tablespoon|
Heat the oil in a large saucepan over medium heat.
Add the onion and cook, stirring occasionally, for 5 minutes.
Add the parsnips.
Reduce the heat to low, cover, and cook, stirring occasionally, for 20 minutes, or until tender.
Add the pears, broth, and ginger.
Cover and cook for 15 minutes longer, or until very tender.
In a food processor or with an electric mixer, blend the parsnip mixture until smooth.
