Roasted Baby New Potatoes
|New potatoes||30 , halved and left unpeeled|
|Onions||2 Medium, thinly sliced|
|Olive oil||1⁄4 Cup (4 tbs)|
|Freshly ground black pepper||To Taste|
|Fresh rosemary leaves||1 Tablespoon|
Preheat the oven to 325°F.
Place the potatoes in a baking pan and cover with the onions.
Drizzle oil over all.
Add salt, pepper, and rosemary.
Bake uncovered until crisp and golden, about 1 hour.
Toss with a spatula several times for even cooking.
