Sherried Sweet Potatoes
|Sweet potatoes||6 Medium|
|Brown sugar||1⁄2 Cup (8 tbs)|
|Orange juice||2⁄3 Cup (10.67 tbs)|
|Orange peel||1⁄2 Tablespoon, grated|
|Sherry||1⁄3 Cup (5.33 tbs)|
|Pecans||1 Cup (16 tbs), coarsely chopped|
Rinse and dry potatoes.
Pierce with a fork.
Place on a layer of paper towels.
Microwave 10 to 12 minutes.
Turn towels one-half turn after 3 minutes and again after 6 minutes.
Peel and cut in 1-inch slices.
Place butter in a 10-inch skillet; heat 30 seconds.
Microwave 1 minute; stir and heat 1 additional minute.
Combine remaining ingredients and pour over potatoes.
Cover and microwave 5 to 6 minutes, turning dish after half cooking time has passed.
